Chinese Barbecued Pork (Char Siu), Homemade Five Spice, + iPad Giveaway!

I have so much fun for you today! I have one my favourite recipes of all time and I’ve partnered with an amazing group of bloggers to give away something that I’m pretty excited about. I know you know WHAT it is because I stuffed it into the title, but let’s get to the recipe before we get into the whats, hows, and whens!

Are you familiar with char siu; that flavourful, luscious, sticky-sweet, bright-red pork served in House Special Soup, fried rice, and on skewers at Chinese restaurants? I have a serious fixation on the stuff. I can’t get enough of it. The problem with satisfying my need for it is twofold:

  • I don’t live near a Chinese restaurant. No. Really… It’s fifteen miles round trip to the nearest one and the nearest one is not worth driving fifteen miles round trip.
  • I’m not super fond of food dyes. They kind of weird me out, honestly… That’s why you don’t see a lot of things calling for food colouring here on Foodie with Family.

With these issues in mind, I started making my own a while back and I think it tastes vastly superior to what I can get at many restaurants. I use red beet powder (Amazon affiliate link)  because that not only adds a little sweetness, but adds a little red to the party without using food dye. Hey- I like pretty foods as much as the next gal,I just don’t like artificial food colouring! Does anyone else feel like diving face first into that plate?

I had a very pregnant friend visiting when I plated this dish the other day. She happily helped me dispatch of the evidence after I snapped a couple shots. Her daughter -who normally doesn’t love meat dishes- assisted in the effort, too. It didn’t take us much time to make that dish look as clean as it did before I threw a pile of food on it.

I have to say a couple of words about the ingredients out of which the marinade is made. Don’t skip the Five Spice Powder. I used to think I couldn’t stand the stuff. It turns out -unsurprisingly- that what I hated was the little jars of indeterminate age that I got from the regular grocery store that then languished in my spice drawer for years on end. Homemade Five Spice Powder is a revelation, to say the least. Made of cinnamon, fennel seed, Szechuan (or Sichuan) peppercorn, star anise, and clove, it might sound a little odd to add to a savoury dish, but I tell ya, it does something special to pork. Chances are you’re pretty familiar with all or most of those ingredients. If I were a betting woman, I’d say the ingredient that most people haven’t used is the Szechuan peppercorn. It’s a key flavour in most Szechuan food. Unlike black or white peppercorns, it’s not known to be spicy or hot, but rather, it’s citrusy and numbs the tongue a bit. All in all, after making my own Homemade Five Spice, I have to say that I’ve done a 180° on my stance and I now sprinkle a little bit of it into nearly everything! If you don’t want to make Homemade Five Spice, you can use five spice powder purchased at an Asian grocer or a well-stocked grocery store.

Are you wondering what in the world you’d do with four whole tenderloins cooked into Chinese Barbecued Pork? Aside from slicing them and serving over rice as pictured and serving to your pregnant friends, you can dice them and toss it into fried rice or onto salad, slice thinly and add to your own House Special Soup or put on split rolls with a slaw for Chinese Barbecue Pork Sliders… I’m sure there are other options I haven’t thought of yet. Chinese Barbecued Pork (Char Siu), Homemade Five Spice, and an iPad Giveaway!

Rating: 51

Fragrant, moist, and full of flavour (garlic, ginger, Sriracha, ) with a sticky-sweet, slightly charred glaze, this Szechuan Chinese restaurant standard is worlds better made at home! This recipe is for four pork tenderloins, leaving plenty to freeze for fast meals at a later date!

Ingredients

    For Homemade Five Spice Powder:
  • 2 teaspoons Szechuan Peppercorn
  • 8 whole star anise
  • 1 tablespoon fennel seed
  • 1 tablespoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • For the Chinese Barbecue Pork:
  • 4 good sized boneless pork tenderloins (about 4-6 pounds total weight)
  • 1/2 cup hoisin sauce
  • 1/2 cup soju (Korean rice liquor) or light rum
  • 1/3 cup brown rice syrup or honey, plus additional for brushing while grilling
  • 1/4 cup soy sauce
  • 2 tablespoons Sriracha
  • 2 tablespoons toasted sesame oil
  • 2 tablespoons ground ginger
  • 2 tablespoons granulated onion or onion powder
  • 2 tablespoons red beet powder (can omit or substitute with 1 teaspoon red food colouring)
  • 1 1/2 tablespoons Homemade Five Spice or purchased five spice powder
  • 1 1/2 tablespoons granulated garlic or garlic powder

Instructions

To Make the Homemade Five Spice:

Put a clean, dry, heavy-bottomed skillet over medium low heat. Add the Szechuan peppercorns and shake the pan back and forth until the peppercorns are fragrant, about 2 to 3 minutes. Immediately add them to a spice grinder with the fennel seed and star anise. Grind until the mixture is as finely powdered as you can make it. Shake it through a fine mesh strainer. Discard what remains in the strainer. Take the sifted spices and stir in the ground cinnamon and cloves. Return this mixture to the spice grinder and grind momentarily to better combine the spices. Store in an airtight container in a dark, cool cupboard. For most potent flavour, use within three months.

To Make the Chinese Barbecued Pork (Char Siu):

Add everything but the pork tenderloins and the spare honey to a large, resealable, zipper-top bag. Seal the bag and use your hands to gently squish and combine the ingredients until it is evenly mixed. Open the bag and add all of the pork tenderloins. Squeeze as much air out of the bag as you can, reseal it, place it on a rimmed baking dish and refrigerate for 12 to 24 hours, turning the bag halfway through the marinating process.

Preheat oven to 375°F. Place the tenderloins on a rimmed baking sheet and roast for 20 minutes. While the tenderloins are roasting, begin preheating a grill, using high heat on half of the grill and low heat on the other half. When the tenderloins have roasted for 20 minutes, transfer them to the HIGH heat side of the grill. Drizzle honey over the tops of the tenderloins and use a heat-proof pastry brush to distribute the honey. When the bottom of the tenderloin has good colour, about 4 minutes, flip it over, drizzle it again with honey and brush to distribute. The second side should colour up more quickly than the first as it was brushed with honey. When that has nice colour and a couple of charred bits, transfer it to the LOW heat side of the grill, flipping it over in the process. Continue drizzling with honey, brushing, and grilling until the internal temperature of the thickest part of the tenderloin measures at least 145°F (medium rare). Transfer the cooked tenderloins to a clean, rimmed baking dish and lightly tent with foil. Allow them to rest for at least 3 minutes before slicing or chilling.

To Serve Immediately:

Slice or dice the pork -hot, warm, or room temperature- and serve over rice, in soup, or on sandwiches or salads.

To Freezer for Later Meals:

Chill the cooked Chinese Barbecue Pork (Char Siu) before wrapping tightly in a double layer of plastic wrap and then a layer of foil. Place the wrapped pork on a baking sheet and put into the freezer. When the pork is frozen firmly, place the wrapped pork in a labeled, resealable zipper top bag and freeze for up to 6 months.

To Reheat:

For best results, remove the desired number of cooked tenderloins from the freezer, remove the foil and double layer of plastic wrap, and thaw in the refrigerator overniht. Reheat in a 350°F in a foil covered rimmed baking dish until heated all the way through, about 15-20 minutes.

If you're in a hurry, remove the foil and one layer of plastic wrap, then defrost gently in the microwave. Remove the last layer of plastic wrap, place in a rimmed, microwave safe dish, cover the dish with plastic wrap, venting one corner, and reheat on medium temperature until hot all the way through. The timing of this will depend on the strength of your microwave.

I have something so fun to share today! I was approached by the good folks at AlbionFit to see if I’d be interested in receiving a swimsuit and some workout gear to review and a $175 gift card to give to one Foodie with Family reader. I looked at their website and then flew back to my email tab to say yes.

Have you ever seen their stuff? That swimsuit up top is the one I ordered. I have to admit something to you.

I haven’t willingly worn a swimsuit in public in years. This is mainly due to the fact that I have had a pregnant or post pregnancy body for quite some time now. Yes, my baby is seven years old. What’s your point? Doesn’t it take twice as many years as months that you were pregnant to regain your pre-pregnancy body? I’m pretty sure that’s what I heard. That means that I have another eleven years before I should be expected to be fit again. Right? In the meantime, I haven’t been able to find a swimsuit that flatters my more well-rounded figure and is still relatively modest, so I swam in an old lady swimsuit (NOT CUTE) or cut-offs and a t-shirt (like Tobias’s never-nudes from Arrested Development.)

Makes me a great person to review a swimsuit,  right?  Here’s the thing, though.  When I took the swimsuit out of the package and tried it on, not only did I not look horrid, but I looked cute.  It held me in where I needed to be held in (I’m looking in your direction, Stomach.) It covered parts that I don’t like to have hanging out (…this means you rear and bosom.)

Most importantly -and I can’t emphasize this enough- I felt pretty in it. That swimsuit is worth its weight in GOLD people. It’s got an old time Hollywood glamour thing going for it and I love it.  I’ve worked this swimsuit pretty hard already (regular lap swimming at a local pool) and it’s holding up like a champ.

That’s not all then sent for me to try out, though. You all may or may not know that I’m a Pilates fanatic. It’s true. I’m as hooked as hooked can be on it, and up until recently, I was wearing a pair of tatty old yoga pants that had a pretty good sized rip in an unmentionable place. When I started attending classes at a local Pilates/Dance studio, I knew the old pants couldn’t come with me (because I’m not a creepy flasher) and my workout clothing from AlbionFit arrived just in time to save me from ignominy.

These pants are on my lower half at every Pilates class I attend. They stretch and move and support marvelously. I’m going to be ordering another pair in black for sure.

Now let’s talk tank tops, shall we? I hadn’t ventured into the arena of workout-specific tops before getting the next two tops I’m going to show you, but I won’t be going back now. The Love Racer tank in seafoam and the Uline Top in White and Graphite are so ridiculously adorable I actually went INTO a store in PUBLIC after my last Pilates class and didn’t feel like a total tool. I was sweaty, I was stinky, but dangit, I was cute.

Main Dish Madness

Thai Chicken Tacos by Gimme Some Oven Whoa. Can everyone agree with me? Just whoa. Tender chicken on slaw with Thai peanut sauce drizzled over it. I want it badly.

Kale, Mushroom, and Cheddar Bake by Simply Recipes Word. I want a pan of this and a spoon and a comfy chair. Clearly, I am in need of comfort food. This looks like the thing to do the job.

Garlicky Greens and Chevre Hand Pies by Starting Fresh Recipes It’s pretty safe to say that I am totally, 100% obsessed with these right now. As a born-Yooper, I have a hand-pie birthright (Hello, Pasties!) and I am eminently qualified to judge hand pies. I declare these to be crave-able. I also declare these to be on my to-do list.

Easy Chicken Green Chili Tacos by My Life as a Mrs. YES, baby!!!! I think tacos and pizza are the perfect foods. They’re the right ratio of meat/cheese/tacos/crunchy goodness. Rawr. RAWR. I could use a half dozen of these right now.

Thai Chicken Pizza by Seeded at the Table Didn’t I just say pizza and tacos are perfect foods? Heck to the yes. I will stick my face in the pizza very, very soon. Mark my words.

Appetizing Appetizers and Snacks

Nutella Brie Bites by Bev Cooks Seriously, Bev. You need to stop doing what you’re doing or I’m going to weigh 500 pounds. These are little tiny rectangles of puff pastry baked with thin slices of brie on top so it gets melty and bubbly as the pastry gets puffy. When they come out of the oven they’re drizzled with warm Nutella. Dear heavenly Father. I’m totally making this for the houseful of guests I have this week. I guarantee my sisters will be parked in front of the tray as it comes out of the oven. I’d better get a big honkin’ wheel of brie.

Pickled Avocados by La Fuji Mama I am all over this like brine on a pickle. It’s a well known fact that I am obsessed with pickles. Also well known is my fixation on avocados. This is happening here and soon and probably getting served on top of a rice bowl with a fried egg and some pickled carrots. That’s all I have to say about that.

Beautiful Breads

Fabulously Fluffy Buttermilk Butter Biscuits by Fields of Cake Biscuits are the instant gratification baby of the bread world. I know biscuits and these biscuits look fantastic. Can’t you just imagine a plate of these fresh from the oven slathered with marmalade? I know I can.

Deadly Desserts

Ho Ho Cake by La Fuji Mama Fuji Mama hit my Friday Fifteen twice this week and for good reason. Lemme tell you, I was talking to my aunt who’s flying up to our area from Florida for the memorial service and I asked what she wanted me to make for her food-wise. She said, “Honey? Just comfort food. Lots of it.” I would say this cake qualifies with a capital Q. It’s a ho-ho cake, people. I think I’ll make three.

Jello Blood Worms by The Idea Room I made this with a cooking class I taught for kids last year. It went over like gangbusters, people. They actually looked like REAL worms after being tossed with Oreo crumbs. In fact, someone came to me and asked if I was really and truly letting the kids eat worms. You’d like photographic evidence? Absolutely. That’s my boy!

I do have one piece of advice: have people handy to help you squeeze the jello worms from the straws. Your hands get slippery and it ends up (*wimpy alert*) kind of hurting your hands a bit.

Knock You Naked Brownies by The Pioneer Woman Well, I don’t know about THAT. I mean, I want those brownies more than I want my left foot right now, but I think I’d keep my clothes on. I’m kind of neurotically modest like that. Well, aside from the time that I actually lifted my shirt to prove to Ree that I was wearing Spanx (the one time I actually WORE Spanx because they’re EVIL) when I was visiting her for the Bush’s Beans event. But that’s another cup of coffee. And the point remains: I want these brownies, but I will eat them clothed. In lots and lots of clothing.

 Beautiful Breakfasts

Oatmeal Brulee with Maple Cinnamon Cream by Very Culinary Oatmeal rocks my husband’s world. I’m pretty fond of the stuff myself. I’m pretty sure this beautiful concoction from Amy at Very Culinary is one of the best looking oatmeals I’ve ever seen. And I’m also equally certain that the heavy cream in it is offset by the whole rolled oats and fruit in the recipe. Heyyyyyy. I didn’t get to the pinnacle of food bloggerhood without some serious rationalization. It’s my gift to you.

 

Books, books, books!

The Code of the Woosters by P.G. Wodehouse. Many years ago, Val gave me my first Wodehouse collection. I had never read anything by him before and I didn’t know what to think about them. It was daughterly duty that made me crack that first cover but -oh my goodness- once I was two pages in, I was hooked. Wodehouse does situational slapstick unlike anyone else I’ve ever read. The Jeeves and Wooster stories are so lighthearted, so sweet, so ridiculous and so endearing that I re-read them nearly every year. They’re the perfect summer read and they do not tax your emotions while still remaining smart and quick. These have my absolute recommendation!

Sense and Sensibility by Jane Austen. Oh sure, everyone knows Pride and Prejudice, and for good reason. Sense and Sensibility is the Jane Austen book that truly has my heart, though. The story -spun only as Jane Austen can- focuses on Elinor who is rational and sensible and her sister Marianne who is a wild, uncontrolled romantic and their suitors. The book isn’t some soppy romance, though, as Jane Austen managed to marry satire and romance. I adore this book.

You know I love Harry & David dearly. They sent me a gorgeous Easter box of their best Royal Riviera pears to review this week. My review, in short, is that they are the best pears I’ve ever had. This is my fourth batch of Royal Riviera pears and they have all been equally wonderful. They’re so juicy and tender that you can eat them from the skin with a spoon. I hate to say it, but we’re ruined on other pears for now because the Royal Riviera pears are so darned good.

Bacon Cheeseburger Mini-Meatloaves and Cheesy Mashed Potatoes | {GIVEAWAY CLOSED}

I love cookbooks. I have a lot of cookbooks. As in AH- LAWT of cookbooks. Shelves and shelves and boxes and boxes of cookbooks are mine. Some of them I like more than others, obviously; some of them speak to me.

Not literally, mind you, that’d be crazy.

What I mean is some of them NAIL my way of eating. The Meatloaf Bakery Cookbook: Comfort Food with a Twist by Cynthia Kallile is one of those. I have to admit, the cookbook surprised me a little… I honestly didn’t expect to be blown away by -of all things- a meatloaf cookbook. From the moment I pulled the book from the envelope, though, I was hooked. Hardcore.

The cover has tiny little cupcake meatloaves with beautifully piped mashed potatoes and a dusting of paprika, a meatloaf pot pie, ADORABLE little meatloaf appetizers with stars of mashed potatoes, a meatloaf in pastry and something that I couldn’t identify but still wanted to eat. Desperately. (I later found out it was a baked mac-and-cheese with crispy bits.)

The first test of any cookbook, though, is how hungry it makes you when you eat it. Usually, I find that when I flip through a cookbook, I find a handful of recipes appealing with one or two must-makes in the mix. Not this time. This time, I wanted to make every. single. recipe. from the Chili Chili Bang Bang (a chili flavoured meatloaf with beans ground into it baked with cornbread on top) to the Omega-3 Meatloaf (a fresh salmon meatloaf topped with *GASP* wasabi mashed potatoes.) I mean, really… There was an Herby Turkey Meatloaf that momentarily made me rethink my Thanksgiving plans.

Let me tell you, it was HARD to narrow down what the first recipe I’d try would be.

This cookbook actually inspired me to drive to the store to get meat so I could make something from it. “Big deal!”, you say? Oh, it IS a big deal. For me, an impulse trip to the store means a half an hour drive in either direction.

I settled on the recipe called “No Buns About It Burger Loaf”. It was, in essence, a bacon cheeseburger meatloaf (with chopped pickle in it!!!!) topped with creamy, cheesy mashed potatoes. Like a dingbat, I forgot to write down the ingredients I needed before I drove to the store, so I did the best I could from memory. I ended up with the crucial stuff (a big old chuck steak to stick through my meat grinder) but blanked on some of the supporting players. I had many fabulous stand-ins at home (for instance, white cheddar vs. the specified yellow cheddar, yogurt vs. the sour cream, and Romano vs. the asked-for asiago/parmesan combo.) so I went ahead anyway.

I didn’t mess around, people. I was confident enough in the recipe after reading it to jump in with both feet and start off with a double  batch. Half of the batch I cooked as directed in greased large muffin tins, the other half I baked in a loaf pan.

The smell of these cooking was enough to drive me to distraction. They smelled like bacon cheeseburgers. I piped mashed potatoes on the little muffin ones when they were done and served them at the dinner table and awaited the reaction.

Hooooooooooooboy.

Locusts have nothing on my family. Those meatloaves disappeared at light speed. That evening was youth group night for my eldest son, so after clearing the dishes and before driving my boy, I wrapped the leftover loaf version of what we had eaten and said, “Honey, don’t eat this. Okay? Please? Eat anything else in the fridge that you’d like, but please leave this. I want to make meatloaf sandwiches tomorrow.” He responded, “No problem!”

Two hours later, I arrived home to find an empty platter with a wadded up piece of plastic wrap and a penitent husband who greeted me at the door with an earnest, “I couldn’t help it! It was so good!”

I will be cooking my way through this cookbook. I honestly didn’t know I was such a nut over meatloaf until I read it. The two of my friends who have thumbed through the book at my house looked at me and asked boldly, “Will you be doing a giveaway of this or should I just buy it now?”

I’ll tell you this, too… At least one of those friends decided she couldn’t wait to see if she would win and went out immediately to buy her own copy.

Bacon Cheeseburger Mini-Meatloaves and Cheesy Mashed Potatoes | {GIVEAWAY]

These mini-meatloaves taste just like a good old-fashioned bacon cheeseburger straight down to the finely diced dill pickle in them! Top them with creamy, Cheesy Mashed Potatoes, a little extra dill pickle and a sprinkling of sesame seeds (instead of a sesame seed bun) and you'll be in seventh meatloaf heaven!

Gently adapted from and with thanks to "The Meatloaf Bakery Cookbook" by Cynthia Kallile.

Ingredients

    For the Bacon Cheeseburger Mini-Meatloaves:
  • 1/2 pound (8 ounces) bacon, cut crosswise into small slices
  • 3/4 cup finely diced cooking onions
  • 1 1/2 pounds ground chuck
  • 1 cup panko or plain white bread crumbs
  • 1 cup shredded extra-sharp Cheddar plus extra for garnish
  • 1 cup shredded Monterey Jack cheese
  • 1/4 cup well-drained finely diced dill pickles plus extra for garnish
  • 1 large egg, lightly beaten
  • 1/4 cup milk, beaten
  • 1/4 cup ketchup
  • 2 tablespoons mayonnaise
  • 1 teaspoon prepared yellow mustard
  • 3/4 teaspoon kosher salt
  • 1/2 black pepper
  • nonstick cooking spray
  • For the Cheesy Mashed Potatoes:
  • 8 Russet potatoes, peeled and cut into 2-inch chunks
  • 1/4 cup whole milk, warmed in the microwave
  • 4 tablespoons of unsalted butter, softened
  • 2 tablespoons plain yogurt or sour cream
  • 1 1/3 cups shredded extra sharp Cheddar cheese
  • 1/2 cup shredded romano cheese
  • kosher salt and freshly ground pepper, to taste

Instructions

Preheat oven to 375°F.

Cook the bacon in a frying pan until crisp. Use a slotted spoon to transfer the bacon to a paper towel lined plate and set aside. Pour off all but about 1 teaspoon of the bacon grease. Add the onion and cook for a few minutes until softened. Set aside to cool to room temperature.

Combine the remaining meatloaf ingredients well with your hands in a mixing bowl. Grease 6 large or 12 standard sized non-stick muffin pan. Use your hands to mound the tops of the meatloaves so they're domed.

Bake in the oven for 25 minutes (for the standard sized mini-loaves) to 40 minutes (for the large loaves) or until the middle of the interior of the loaves measures 160°F on an instant read or meat thermometer and the meatloaf tops are browned.

Remove the pan from the oven and let cool a couple of minutes before trying to remove the loaves.

When you can handle the pan, unmold the meatloaf cupcakes and set on a cutting board or flat pan to prepare for "frosting" with the mashed potatoes.

To Make the Cheesy Mashed Potatoes:

Cover the peeled and chunked potatoes with cold water in a large saucepan. Bring to a boil, uncovered, over high heat. Reduce the heat and simmer the potatoes until they are fork tender, 10 to 15 minutes.

Drain the potatoes in a colander and return them to the hot pan. Add the milk, butter, and yogurt to the potatoes and mash until very smooth. Add the shredded cheeses to the hot potatoes and mash that into the potatoes until melted into the potatoes. Taste the potatoes and adjust with salt and pepper. If you're going to pipe the potatoes onto the mini-meatloaves, you want to be sure you don't have chunks as those could block the pastry tip. If you're going to dollop or spread it on top, you don't need to be quite as thorough in eliminating lumps of potato.

To Serve:

Dollop or spread mashed potatoes on top of the meatloaf cupcakes ~OR~ insert any large tip into a 12-inch to 14-inch pastry bag. Fill with the hot Cheesy Mashed Potatoes. Be careful as the bag will be hot to the touch! Pipe the potatoes onto the tops of the meatloaf cupcakes. Serve immediately, topped with extra pickles, shredded cheese and a sprinkling of sesame seeds, if desired.

Leftovers, if you have them, can be stored tightly wrapped in the refrigerator for up to 3 days and reheated in either the microwave or a moderate oven (350°F.)

Fannie May Chocolate Covered Strawberries Giveaway {Giveaway Closed}

I don’t usually do a straight giveaway, but this is fun, people. I just couldn’t say no! The fine folks at Fannie May Berries offered to send me a box of their chocolate covered strawberries. Just tell me, how could I possibly say no? Furthermore, they said that if I liked them, they’d give away a box to my readers. That’s YOU ALL, folks! I always get excited when people offer to give things away to you guys. It makes me kind of giddy. But I also have a rule… I don’t give it away unless I think someone would be really thrilled to get it. This past summer I had the distinct privilege of traveling to Oregon as part of a group of bloggers brought out by Harry & David to tour their orchards, facilities and community. What a treat! It was wall to wall wonderment, beauty and inspiring people. You don’t get a trip like that every day, I’ll tell ya. Aside from making some great new friends, I came away from it all with a deep respect and affection for Harry & David’s operation and philosophy. They take care of their people – they have employees who have worked there for their entire lives who come from parents who worked their for their entire lives- and the mutual loyalty shows in their products.

As I drove from the very north of Oregon to the very south, I had ample time to admire the pines and peaks of the state. Living in New York, I’m no stranger to mountains and trees, so there was a bit of familiarity mixed in with the newness. Where New York has high peaks, they’re rounded and aged; worn down by elements and time. Oregon’s peaks are young and raw and dramatic. What views!

Harry & David is best known for its pears, but they also have spectacular apples. When they offered to give a gift box to Foodie With Family readers, I had no idea what to pick and posed the question to you all on Facebook. It came down to a tie, so I tossed a coin and was thrilled that the coin favoured a gift box with apples in it, too. It didn’t just have apples though, it had Moose Munch (on which I am now officially dependent), their spectacular pears, summer sausage, cheddar cheese, MASSIVE chocolate covered Oregon cherries, raspeberry galettes, olive oil crackers, and mixed nuts. Oh man. Good choice, people!!! I’m so excited because they sent one to me, too! Whoever wins this thing is going to be one seriously happy camper. (Giveaway details are after the recipe!)

…But first…

We must talk pie. I have said it before and I’ll say it again, pie is the best dessert in the whole world; fruit, crust, sweet, tart, tender fruit, and beauty all in one package. It’s just plain superior to anything else you can make. And I -unsurprisingly, probably- have some very strong opinions on apple pie. Don’t get me wrong, I will eat ANY piece of apple pie put in front of me and take great joy in it, but if I’m making a pie, I’m going to make my favourite version of it and THIS pie is it.

I’m going to tell you right now, I buck tradition in my apple pies. I leave out cinnamon, nutmeg, cloves and whatnot. I have no problems with them, but when I’m making the pie, I prefer it without that. I want the vibrant, clean, sparkly apple to shine through without all those other notes to sully it. (Reminder: I will happily eat any sullied apple pies, too.)

I use home canned boiled cider syrup, but you can buy it commercially or -in a pinch- substitute plain apple cider in its stead. Do whatchoo gotta do, but do make this pie. It is as high as New York’s High Peaks and a nod to the apple growing power houses of New York and Oregon. This pie crams twelve big old apples in between two pie crusts and sings APPLE! A light brushing of milk and a generous sprinkling of coarse sugar brings the whole thing home.

Oh mama.

Cut a wedge out of that pie and look at it.

This is a pie to make memories.

High Peaks Deep Dish Apple Pie and a {GIVEAWAY!}

This glorious high-peaks, deep-dish apple pie is the ultimate in apple pies. Clean, pure apple flavour shines through and tastes wonderful with whipped cream, vanilla ice cream or a big wedge of aged Cheddar on the side.

Ingredients

  • Pie pastry for a double-crust, 9-inch pie
  • 10-12 apples, peeled, cored and thinly sliced
  • 1/4 cup boiled cider syrup or plain apple cider
  • 2 tablespoons lemon juice
  • 1 teaspoon vanilla extract
  • 1 cup granulated or raw sugar
  • 1/4 cup clearjel or cornstarch
  • Optional: milk and coarse sugar for brushing on the crust

Instructions

Preheat the oven to 425°F.

Roll out half of your pie pastry and line a deep dish pie plate, draping excess over the edges. Set aside.

In a large mixing bowl, toss the apples with the cider syrup, vanilla extract and lemon juice. In another smaller bowl, whisk together the sugar and clearjel or cornstarch until evenly combined. Pour over the apples and toss to evenly distribute. Use your hands to carefully pile and pack the apple slices into the pie plate. You may have to break up some pieces to find a way to get it all in there and it WILL mound up over the crust, just keep the excess pie crust clean and uncovered.

Roll out the second pie crust so that it is large enough to drape over the apples and around the edges of the pie plate a bit. Tuck the top crust under the excess bottom crust and crimp in whatever style you prefer. Cut a couple of vent holes on top of the crust (slits or shapes), brush the crust with milk and sprinkle with coarse sugar.

Put in the oven and bake at 425°F for 15 minutes, lower the heat to 375°F and continue baking for 45-50 minutes or until the juices are bubbly in the pie and the apples are tender when pierced through the vent holes. If the crust starts browning too quickly, tent loosely with foil around the edges.

Cool at least to room temperature before slicing if you want the slices to hold together.
