Thin pork chops are a quick-cooking, budget-friendly cut. But unless you know what you’re doing, they can end up like shoe leather.
Everyone who has ever cooked thin cut pork chops knows it’s a balancing game between getting a dish that looks good and is still juicy. They’re sliced so thinly that it seems impossible to get any decent colour on them without overcooking them to the point of being nearly inedible.
Air Fryer Pork Chop Recipe
This is where our magical homemade dry rub enters the chat. Simple ingredients combine not only to bring colour and flavour to the party, but also to seal moisture into these easy, irresistible bone in chops air fryer style. Brown sugar helps keep them juicy while smoked paprika makes them a feast for both the mouth and the eyes.
My strong preference is for English style ground mustard like Colman’s English Mustard Powder. It has so much more oomph than ordinary ground mustard. It’s also my preferred mustard powder for any of my versions of macaroni and cheese, so it’s not bad to have it on hand. It’s my secret weapon in making many dishes have that certain je ne sais quoi.

Air Fryer Thin Pork Chops
This recipe was made using bone-in pork chops. You can certainly use boneless thin-cut pork chops if that’s all you can lay your hands on. Just be aware that boneless cuts cook faster, so you’ll want to keep your eyes on them.
You may think you have far too much dry rub for the pork chops you have on hand, but you really do want to generously coat them. You’ll need to press the rub to get most of it to stick.
And don’t skip preheating your air fryer. Thankfully, the pre-heat cycle on air fryers is super quick, so there’s no reason not to do it since it makes such a difference in the end product. Part of what keeps these chops so juicy is that they go into a hot air fryer and start cooking immediately.

- 3 tablespoon brown sugar
- 1 tablespoon smoked paprika
- 1.5 teaspoons granulated garlic
- 1 teaspoon black pepper
- 1 teaspoon ground mustard
- 1 teaspoon salt
- 1 teaspoon granulated onion
- 1 teaspoon thyme
- 2 tsbp olive oil
- 6 thin pork chops
Instructions
- Preheat air fryer to 400 °F degrees.
- Use a fork to combine the brown sugar, smoked paprika, granulated garlic, black pepper, ground mustard, salt, granulated onion, and thyme together in a small bowl.
- Drizzle both sides of the pork chops with the olive oil, then sprinkle the spice mix evenly over both sides of the pork chops. Rub the chops to make sure they’re completely coated.
- Arrange the pork chops in the air fryer, ensuring that there is space for air to circulate around all of them. They cook quickly, so if you need to do more than one batch to avoid overcrowding the air fryer, please do that!
- Air fry at 400℉ for 5 minutes, flip, and cook 4-5 minutes more or until they reach an internal temperature of 145 °F degrees.
