A pizza sub a.k.a. pizza sandwich is a toasted tender sub roll bursting with garlicky Italian sausage crumbles, loads of gooey melted cheese, and crispy edged pepperoni. You can easily increase this recipe to feed as many hungry folks as you want!

I’m a firm believer that there’s no such thing as too many versions of pizza and let me tell you, these pizza subs are a great version. It’s everything wonderful about pizza built in sandwich form.
We’re talking about drizzling some sub rolls with a little olive oil and seasoning and toasting them in a hot oven. We build layers of cheese, sausage and sauce, and pepperoni on the rolls. Plunk the pan back into the oven until everything is melted, gooey, roasty, toasty, and utterly perfect.
If you want, you can serve your pizza sub with more sauce for dipping. It’s up to you. We don’t need to complicate this. It’s simple and simply perfect.

Of course, you’re welcome to stuff these pizza sandwiches with even more pizza toppings! Onions, peppers, olives, mushrooms, Canadian bacon, and even pineapple tidbits are amazing in these pizza subs. The sky is the limit!
Keep in mind that you should sautée any vegetables to crisp-tenderness that you plan to add. This is because your sandwich is only spending about 5 to 8 minutes in the oven once it’s topped. That’s not long enough to cook veggies; it’s just long enough to heat them and melt the cheese.

Ingredients
- 1 sub roll
- 1 teaspoon olive oil
- ½ teaspoon Italian seasoning blend or more to taste
- 1/2 cup Italian sausage crumbles
- ¼ cup pizza sauce plus extra for dipping
- 4 slices mozzarella cheese or a scant cup of loosely packed grated mozzarella cheese
- 6 slices pepperoni
- 1 thinly sliced green onion
Instructions
- Preheat oven to 450ºF. Line a half sheet pan with parchment paper.
- Gently open your sub roll. Drizzle the cut surfaces with your olive oil and sprinkle with a ½ teaspoon of Italian seasoning. Slide the pan into the oven and toast for 5 minutes. Watch it to make sure it isn’t browning too quickly. You really only want a little golden tint to the edges of your roll because it’s going to go back in again!
- While the rolls toast, toss together the sausage crumbles and the sauce. Set this aside.
- When the rolls are toasted, pull the pan from the oven and arrange 2 slices of the mozzarella over the toasted roll, covering as much of the roll as you can with the slices. Spoon the sausage crumbles over the cheese and top with the remaining two slices of cheese.
- Slide the pan back into the oven and cook until the cheese is melted, bubbly, and as done as you like it. Pull the pan from the oven and sprinkle the sliced green onions over the top. Serve immediately with additional sauce for dipping or drizzled on top of the melted cheese.
