4slicesmozzarella cheeseor a scant cup of loosely packed grated mozzarella cheese
6slicespepperoni
1thinly sliced green onion
Instructions
Preheat oven to 450ºF. Line a half sheet pan with parchment paper.
Gently open your sub roll. Drizzle the cut surfaces with your olive oil and sprinkle with a ½ teaspoon of Italian seasoning. Slide the pan into the oven and toast for 5 minutes. Watch it to make sure it isn’t browning too quickly. You really only want a little golden tint to the edges of your roll because it’s going to go back in again!
While the rolls toast, toss together the sausage crumbles and the sauce. Set this aside.
When the rolls are toasted, pull the pan from the oven and arrange 2 slices of the mozzarella over the toasted roll, covering as much of the roll as you can with the slices. Spoon the sausage crumbles over the cheese and top with the remaining two slices of cheese.
Slide the pan back into the oven and cook until the cheese is melted, bubbly, and as done as you like it. Pull the pan from the oven and sprinkle the sliced green onions over the top. Serve immediately with additional sauce for dipping or drizzled on top of the melted cheese.
