Watermelon Feta Salad: Printer Friendly Version
Ingredients:
- a block of plain feta cheese, blotted dry and cut into thin slices
- a seedless watermelon, cut away from the rind and sliced into thin slabs
- cracked black pepper
- extra virgin olive oil
- balsamic vinegar
- fresh lime
- cleaned baby arugula (or other peppery greens)
Pile arugula on serving plates. Lay a slice of feta on the greens, top with a slab of watermelon and some cracked pepper. Repeat the layers twice, ending with a slice of feta cheese. Grind some more pepper over the top, squeeze a wedge of lime over the top. Drizzle lightly with olive oil and sprinkle a small amount of balsamic vinegar over the greens. Sit back and admire how pretty it is and then eat away!
