Big Mac Tacos: bringing “the golden arches” to taco night with irresistible tacos filled with seasoned beef, special sauce, lettuce, cheese, pickles, and onions on a sesame seed… tortilla. It’s everything you love about Big Macs in taco form and you don’t even have to leave the house to indulge!

Equipment

  • oven
  • Large skillet
  • Ground Beef Chopper (or Sturdy Spoon)
  • measuring spoons
  • Measuring Cups
  • Small Whisk or Fork
  • tongs
  • Foil

Ingredients

For the Taco Meat:

  • 1 pound ground beef
  • ¾ teaspoon kosher salt
  • ½ teaspoon black pepper
  • ½ cup ketchup plus 2 tablespoons
  • 2 tablespoons yellow mustard
  • ½ teaspoon granulated garlic
  • ½ teaspoon granulated onion
  • 1 ½ tablespoons dill pickle brine
  • 1 teaspoon cornstarch

To Assemble the Big Mac Tacos:

  • 10 small corn or flour tortillas
  • 8 slices American cheese or mild cheddar
  • 2 cups shredded iceberg lettuce
  • 1 cup chopped dill pickles
  • 1 cup chopped sweet onions or green onions
  • ½ cup Burger Sauce or more to taste
  • Sesame seeds

Instructions

  • Crumble the ground beef into a medium skillet over medium heat. Sprinkle the salt and pepper over it and break it up as you brown it.
  • If there is a large amount of fat, you can pour it off.
  • Any fat in the neighborhood of 2 tablespoons or so can remain in the pan to bring more flavour to the party. Stir in the ketchup, granulated garlic, and granulated onion.
  • In a small bowl or jar, stir or whisk together the pickle juice and cornstarch to make a slurry. Pour this mixture over the ground beef and stir well, over medium-high heat, until the sauce thickens and is glossy.
  • Using tongs, char each tortilla over a burner. If you do not have a gas stove, you can heat each tortilla briefly in a dry frying pan. Stack the charred or heated tortillas in a piece of foil large enough to fold over them to retain the heat.
  • Lay a slice of cheese in each heated tortilla and top the cheese with the Big Mac beef filling, dividing the filling evenly between the tortillas. Divide the lettuce, pickles, and onions between the tacos.
  • Drizzle the burger sauce over the top and sprinkle with sesame seeds just before serving.
