Juicy, meaty, succulent smoked chicken legs are as easy as they are budget friendly; no need to brine or marinate. All it takes is some drumsticks, a little olive oil, dry rub, apple juice, and barbecue sauce and 90 minutes later, you have the most wonderful smoked chicken legs. It's a recipe easy enough for a beginner, but tasty enough for experienced cooks!
Load your smoker with fruit wood pellets or chunks according to the manufacturer's instructions. Preheat your smoker to 275ºF. Clean grates well.
Drizzle the olive oil over the legs and rub to cover them evenly. Sprinkle and rub in the dry rub to distribute it evenly.
Arrange the drumsticks on the pellet grill leaving ample space between the legs to let smoke circulate.
Smoke for 90 minutes, or until the internal temperature of the meat is 175ºF*.
*Stir together your glaze ingredients and brush evenly over the chicken when it reaches 165ºF.
Optional:
Raise the heat on your pellet grill to 375ºF once the internal temperature on the chicken closest to the bone reaches 165ºF. That will crisp up and caramelize the glaze a little more as it reaches the finished temperature of 175ºF.
