Spicy Mango Slaw is crunchy purple cabbage with a hint of tropical sweetness from just barely ripe mango, and the tart and tangy lime juice and honey dressing gets a flavour boost from minced red onion and fragrant cilantro.

Ingredients
  

  • 8 cups shredded or very finely sliced purple cabbage
  • 1 just barely ripe but still firm mango, peeled and thinly sliced
  • 1/2 to 2 fresh jalapeno peppers, stems and seeds removed then minced
  • 1/3 cup packed fresh cilantro leaves
  • 1/4 cup finely chopped or minced red onion
  • 2 limes, juiced
  • 2 teaspoons mild honey
  • 1 teaspoon kosher salt

Instructions
 

  • Gently toss all of the ingredients together in a mixing bowl. Cover tightly and refrigerate for at least 1 hour for flavours to meld. This slaw is best eaten within 48 hours of being made, but is still good for 4 days.
