Hot Ham and Cheese Rolls

Hot Ham & Cheese Rolls start with the most beautiful, easy-to-work-with semolina dough wrapped around classic smoked deli ham, loads of shredded cheddar, and just enough chopped green onion to keep things interesting, sliced into rolls, and baked to perfection, ready to unwind or bite straight through the pinwheel of tender bread, hot salty ham, and melted, gooey cheesy perfection.

Ingredients
  

  • 1 batch Sesame Semolina Bread Dough or 2 pounds frozen bread dough, thawed according to package instructions
  • 19 thin slices deli ham
  • 8 ounces sharp Cheddar, grated coarsely
  • 1 bunch green onions, green parts only thinly sliced

Instructions
 

  • Roll out the bread dough until it is a 24-inch by 18-inch rectangle. Sprinkle about a quarter of the cheese over the surface of the dough. Lay out the ham slices in overlapping rows to cover all but 1-inch along the 24-inch side nearest you.
    Scatter the remaining grated cheese and green onions over the ham. Gently roll the furthest edge onto itself and roll up toward you. Gently pinch the seams together and slice into 1 1/2-inch to 2-inch rounds. Arrange on a silpat or parchment lined half-sheet pan. Cover with a clean tea towel and let rise for about 45 minutes, or until puffy looking.
    Preheat oven to 400°F. Remove the towel and bake for 20-25 minutes or until deep golden brown. Let the rolls stand for 5 minutes before transferring to a rack or serving plate.
