I have something so fun to share today! I was approached by the good folks at AlbionFit to see if I’d be interested in receiving a swimsuit and some workout gear to review and a $175 gift card to give to one Foodie with Family reader. I looked at their website and then flew back to my email tab to say yes.

Have you ever seen their stuff? That swimsuit up top is the one I ordered. I have to admit something to you.

I haven’t willingly worn a swimsuit in public in years. This is mainly due to the fact that I have had a pregnant or post pregnancy body for quite some time now. Yes, my baby is seven years old. What’s your point? Doesn’t it take twice as many years as months that you were pregnant to regain your pre-pregnancy body? I’m pretty sure that’s what I heard. That means that I have another eleven years before I should be expected to be fit again. Right? In the meantime, I haven’t been able to find a swimsuit that flatters my more well-rounded figure and is still relatively modest, so I swam in an old lady swimsuit (NOT CUTE) or cut-offs and a t-shirt (like Tobias’s never-nudes from Arrested Development.)

Makes me a great person to review a swimsuit,  right?  Here’s the thing, though.  When I took the swimsuit out of the package and tried it on, not only did I not look horrid, but I looked cute.  It held me in where I needed to be held in (I’m looking in your direction, Stomach.) It covered parts that I don’t like to have hanging out (…this means you rear and bosom.)

Most importantly -and I can’t emphasize this enough- I felt pretty in it. That swimsuit is worth its weight in GOLD people. It’s got an old time Hollywood glamour thing going for it and I love it.  I’ve worked this swimsuit pretty hard already (regular lap swimming at a local pool) and it’s holding up like a champ.

That’s not all then sent for me to try out, though. You all may or may not know that I’m a Pilates fanatic. It’s true. I’m as hooked as hooked can be on it, and up until recently, I was wearing a pair of tatty old yoga pants that had a pretty good sized rip in an unmentionable place. When I started attending classes at a local Pilates/Dance studio, I knew the old pants couldn’t come with me (because I’m not a creepy flasher) and my workout clothing from AlbionFit arrived just in time to save me from ignominy.

These pants are on my lower half at every Pilates class I attend. They stretch and move and support marvelously. I’m going to be ordering another pair in black for sure.

This Go-Long top with thumbholes somehow manages to be adorable and one of the most comfortable things I own all at the same time. With warmer weather on us, I throw this on over whatever I’m wearing in the cool mornings and evenings. I got fuschia because, well, I like pink things.

Now let’s talk tank tops, shall we? I hadn’t ventured into the arena of workout-specific tops before getting the next two tops I’m going to show you, but I won’t be going back now. The Love Racer tank in seafoam and the Uline Top in White and Graphite are so ridiculously adorable I actually went INTO a store in PUBLIC after my last Pilates class and didn’t feel like a total tool. I was sweaty, I was stinky, but dangit, I was cute.

Pulled Pork Walking Tacos {giveaway closed}

First, I need to get something out of the way. Isn’t my boy adorable? Look at those eyes. That face. That smile. This boy melts my heart. Now, let’s talk about what he’s holding in his hands that’s causing that smile.

It’s that GO GO GO GO time of year.  Everything from buds on trees to school schedules is running at breakneck speed toward an explosion of greenery and excitement. Snow has melted here and whether it stays that way remains to be seen, we ARE in New York State after all. The kids, however, are busy puddle jumping, creek stomping, tree climbing, and biking like it’s their job. I suppose it is.

Busy days and activity filled evenings are the standing order. Sometimes you just gotta meet the challenge with a walking taco.

Right about now, there’s a big part of the Central U.S. saying, “You betcha!” and quite a few other folks scratching their heads. A Walking Taco, as I have known it, is a snack sized bag of Fritos (!) or Doritos (?) that is sliced open down the side and piled high with taco toppings.

Yes, you must slice it down the side instead of popping it open in the usual way. Observe my hand model with the filthy-playing-outside-all-day nails.

Why do it this way? Well, it’s for fittin’ in all the stuff, of course. Just look at this spread.

This standard of high school football, baseball, softball, and soccer games, wrestling matches, and community fundraisers is popular both for its ease of preparation and for the lack of additional serviceware needed for it. The chip bag forms the bowl, you pile in all the toppings that you possibly can and a plastic spoon or fork is all you really need to deliver the goods where they’re intended to go.

Since by this point you probably know I’m more than a little fixated on pulled pork (see examples here, here, here, and here) and I’ve waxed on and on about making a ridiculously inexpensive huge amount of pulled pork to keep in the freezer (examples here and here) I’ll spare you that harangue this time around. I’m going to go ahead and assume you have a stash in your freezer or have plans to make some soon. If you don’t, I’m pretty sure you’re aware you can make it easily ~or~ you have a source for purchasing pre-made pulled pork. Any which way you shred that pork shoulder, a Pulled Pork Walking Taco is sure to make your entire crew gleeful.

Heck. It makes ME gleeful. You know how I feel about Fritos.

Can a meal get easier than this? Well, sure… if you call someone to deliver it, but even with the bagged chips, I’m thinking you’re still ahead when you make this at home. With a little creative insulated packaging, you could even take this on a day excursion or a trip to the park for a fast dinner.

Pulled Pork Walking Tacos

Pulled Pork Walking Tacos

This is a Midwestern and Central US classic gussied up a bit; Fritos or Doritos in a snack-sized bag topped with Pulled Pork, sour cream, salsa, fresh cilantro, avocado cubes and whatever else your heart desires. These fun, portable meals please kids of all ages and make clean-up beyond snappy!

Ingredients

    For Each Walking Taco:
  • 1 snack sized bag of Fritos or Doritos
  • 1/3 cup fully cooked pulled pork, reheated You can use this recipe, or this recipe, or use purchased pulled pork.
  • Optional Toppings:
  • Shredded Cheddar or Monterey Jack Cheese
  • Shredded lettuce
  • Fresh cilantro leaves
  • sour cream or Greek yogurt
  • salsa
  • chopped tomatoes
  • chopped black olives
  • chopped avocados
  • guacamole
  • barbecue sauce
  • hot sauce

Instructions

Slice the bag of chips open along the side rather than the top. Slightly crush the bag to break up the chips a little bit. Pile the pulled pork in and add as many toppings as you'd like. Pop a fork in there and eat immediately!

Fannie May Chocolate Covered Strawberries Giveaway {Giveaway Closed}

I don’t usually do a straight giveaway, but this is fun, people. I just couldn’t say no! The fine folks at Fannie May Berries offered to send me a box of their chocolate covered strawberries. Just tell me, how could I possibly say no? Furthermore, they said that if I liked them, they’d give away a box to my readers. That’s YOU ALL, folks! Aw, nuts!

…Or so I said when I learned that my tenure in the Project Food Blog competition was done. After a brief spell of sitting on my bar stool at my counter indulging in self-pity, I came to three conclusions.

  1. I was truly proud of each and every entry I submitted to the competition because each one represented my approach and attitude toward food.
  2. I was kind of relieved. I had a pumpkin carving party to attend that night and that meant I could really have fun without worrying about a deadline.
  3. I have the most loyal, kind, sweet, and hilarious readers ever created. The emails and messages of support left on the Foodie With Family fan page were and are much appreciated.  And truth be told, you guys kind of choked me up a little bit.  Thank you for all your support for me both during and after the competition.  You are awesome.

Now, that being said, I thought the most appropriate way to say ‘thank you’ and express my opinion about being foisted from the competish was to make some nuts.  As in aw, nuts.  As in I’m nutty.  As in I’m nuts for you guys.  As in…  let’s just make these nuts already, eh?

Spicy, sweet, salty, and totally addictive, these nuts will become an instant necessity in your holiday food arsenal.  You will dream about these.  Years ago (and we won’t say how many because I might be having an aging crisis), a friend brought these to an event that I organized at the office*.  Let’s just say that these didn’t make it past my desk to the buffet table.  They stayed with me.  And my friend wasn’t allowed to pass the desk until he jotted down the recipe for me.  Because I’m just that kind of person.

*The aforementioned event -my brainchild- was “PigFest” wherein we spent each Friday in November bringing in dishes to pass with the express aim of expanding our stomachs to better hold the bounty that would be lain before us at upcoming holiday events.  Who ever said advertising people were impractical?

Let’s talk about these nuts for a moment.  You can serve them warm (kept that way in a little slow-cooker) or room temperature; either way has its advantages. You can change out the seasonings used to spice them up.  You can ratchet up or scale back on the heat.  You can swap out walnuts, cashews, peanuts, Brazil nuts or whatever floats your boat for the almonds. You can pour a bunch of the cooled nuts into a clean canning jar, wrap some ribbon or rafia around it and give it as a fabulous hostess gift.  But what you can’t do is skip making these.

Spicy Cocktail Nuts

Recipe by Emeril Lagasse

  • 1 large egg white
  • 1 teaspoon water
  • 4 cups raw almonds (…or raw walnuts, pecans, or peanuts)
  • 1/2 cup sugar
  • 2 tablespoons Emeril’s Essence, recipe follows (or whichever spice blend you prefer…)
  • 1/2 teaspoon cayenne
  • 1/4 teaspoon salt

Preheat the oven to 250 degrees F. Line a large baking sheet with parchment paper.
In a large bowl, whisk together egg white and water until frothy. Add the nuts and toss to coat. In a small bowl, combine the sugar, Essence, cayenne, and salt. Add to the nuts and stir to coat evenly. Spread the nuts on the prepared pan and bake until dry, about 45 minutes, stirring every 15 minutes. Remove from the oven and stir to separate. Let cool on the baking sheet. Serve warm or at room temperature.

Essence (Emeril’s Creole Seasoning)

Recipe by Emeril Lagasse

  • 2- 1/2 tablespoons paprika
  • 2 tablespoons salt
  • 2 tablespoons garlic powder
  • 1 tablespoon black pepper
  • 1 tablespoon onion powder
  • 1 tablespoon cayenne pepper
  • 1 tablespoon dried leaf oregano
  • 1 tablespoon dried thyme

Combine all ingredients thoroughly and store in an airtight jar or container. Yield: about 2/3 cup

Peanut Butter Balls

Hi friends!  The last few weeks have been maddeningly busy.  We’ve done a lot of work on our house and property, camped, traveled, been visited, and had animal crises.  I hope I have a chance in the next couple of weeks to settle back into a regular blogging routine.  With all the fresh produce hitting the markets, I have so many delicious recipes to share with you.  Until then, please enjoy this short but sweet (har har.  I crack me up.) recipe. And the sweet quick giveaway at the end.  Read on!

Peanut butter + Chocolate= Bliss

I cannot think of a combination that makes me happier.  There’s just something about the salt and the sweet and the creamy and the crunchy all together that makes my heart go pitter pat.  And making Peanut Butter Balls is one of my favorite ways to get that peanut butter and chocolate fix.  Chocolate chips, peanut butter, condensed milk and confectioner’s sugar all in one happy little portable package? It’s like an inside-out Reese’s Peanut Butter Cup. Oh baby.  Since it’s made with peanut butter it’s healthy, right? (Don’t you DARE tell me it’s not healthy.  Please don’t mess with my happy thoughts…) Even better, these little babies don’t melt in your hands!

This is one of the foods that we take camping with us every single time without fail.  It just wouldn’t be a family camping trip for us without the ubiquitous Peanut Butter Balls.  They are the perfect camping snack fare since they are high-protein and easily transportable.  It’s not just camp food, though.  It makes the perfect summer snack, too, since it requires zero cooking, and can be safely transported without a cooler.

Make these.  Today.  And then make another batch to fill the bowl since you hid in the broom closet so you could eat the entire first batch by yourself.  No.  Wait.  That was me.  Sorry.

Peanut Butter Balls

For a healthier version of the recipe, use the honey and non-fat instant dry milk.

Ingredients:

  • 1 cup creamy or crunchy style peanut butter (I prefer all-natural peanut butter)
  • 1/2 cup sweetened condensed milk or honey
  • 1/2 cup powdered sugar or non-fat instant dry milk
  • 1/2 cup semi-sweet chocolate chips

Add all ingredients together in a large mixing bowl.

Stir well until evenly combined. At first you might think it’ll never come together…

Just when you’ve decided that you measured wrong, (“I mean, really, how am I supposed to roll THIS stuff?”)  it’ll come together and look like this!

Do you have a disher laying around? (In other words, a scoop.)

peanutbutterballs4Is this crucial to the recipe?  Certainly not, but it definitely makes the process go a little quicker.  If you don’t have one you can just scoop up portions of the peanut butter mix with a serving spoon.  No harm, no foul!

Scoop a teaspoon of the mixture into the palm of your hand.  Use both hands to roll lightly until it forms a ball.  Set onto a plate or into a container.

Repeat with the remaining peanut butter mixture until you have used it all.

Store uneaten peanut butter balls in a tightly lidded container in the refrigerator.  Can be left out at room temperature for several hours without problems!  Like they’ll last that long…

But wait!  I mentioned a giveaway, right?  I love my disher.  I use it all the time.  It scoops cookie dough, meatballs, peanut butter balls (washed between each use, of course) and anything else I can think of that I want in adorable little scoops.
