Okay, spoke too soon on the husband's opinion -- he didn't like it. He said it was "too spinach-y" but he's, you know, weird about spinach. So I brought it into work because I needed people to eat the stuff and HOLY CRAP did folks love it. The main feedback I got was folks giving me two thumbs up while speechless due to a full, chewing mouth.

Passing the recipe along now!

Made this dip tonight and the kid loved it! My husband hasn't eaten it yet but it's just the kind of thing that is up his alley -- very flavorful + lots of garlic.

I ended up putting in a whole 4-oz. package of feta crumbles (maybe about 1 cup total) because the kid said it needed more feta flavor. Also, made the following substitutions: 1 tsp. garlic powder + 1 tsp. kosher salt for 2 tsp. garlic salt, and 1/2 tsp. smoked paprika for 1/2 tsp. paprika.

Thanks for sharing this!

Amy- No law against the store-bought phyllo cups, but these really are super easy. It'll be great either way!

Melissa- I knew it would! I made them yesterday. I intended to share some with my mom when she visited, but darn it if she wasn't there five hours AFTER I made these. They were gone way before she got here.

So where's my spoon?

Amy, don't fear the phyllo! I swear if I don't freak about it, no one should.

And I really want to make these, perhaps as one of my Thanksgiving day appetizers. I have to say I was really proud of myself for realizing right away (when you sent the picture) how you made the cups. I know, it seems obvious. But for me, it was an accomplishment that I knew.

This post makes me very, very happy. Thank you thank you thank you. :)

Yogurt, spinach, and feta...and finger food. I'm all over this one. But I'll probably buy the pre-made phyllo cups (as she rolls her eyes.)
